
I love cooking with coconut oil because of its wonderful flavor. Its great used in curries, or my favorite, to pop popcorn. Many people shy away from it because of the saturated fat content. Its important to know that the saturated fat in coconut oil is different than that in animal products. The saturated fat in coconut oil is mostly medium chain fatty acids as opposed to meat which is comprised of long chain acids. Those medium chain triglycerides are much easier for our bodies to break down than the long chains. It is now known that coconut oil is a good fat.
