This is a super simple healthy and refreshing summer salad. Take this to a barbecue with you as a side dish. Bulk it up with watercress if you like. You could also chop the veggies really small and serve it as a relish for grilled salmon. This recipe serves about four people. Just a warning, my husband and I have finished it off together in one sitting….
1 Large English Cucumber, halved and sliced thin
7-8 Radishes, sliced thin
1+ Cup Grape Tomatoes, halved (Cherry tomatoes would work too)
1/4 Large Red Onion, sliced thin (about 1/2 - 3/4 cup)
1/4 Cup Rice Vinegar
1 Tbsp Dijon Mustard
1 tsp Dry Dill (use fresh if you like)
Pinch of Sugar
Pinch of Salt & Pepper
Prep out all of your veggies. Rinse the red onion under cold water and drain well. Now, place all the veggies in a good sized mixing bowl. In a separate small bowl, mix together the vinegar, dijon, dill, sugar, salt, and pepper.
Pour the dressing over the veggies and mix well. Taste and adjust the seasoning with salt and pepper. This salad would be good with watercress and a little feta sprinkled over the top. Yum….. Really refreshing on a hot summer day.
