This is the peanut dipping sauce recipe I use with the Avocado Summer Rolls. I made this with my class of kids at Whole Foods and also at the Ladies Night Thai Class. It was a big hit at both events.
1 Cup Creamy Peanut Butter (I like the natural kind, no additives)
1/2 Cup Coconut Milk
1/4 Cup Water
1 Tbsp Soy Sauce
1 Lime Juiced
1 Tbsp Brown Sugar
1 Tbsp Cilantro, Chopped
Combine all ingredients in a bowl and mix well using a wire whisk. If too thick, add more water until desired consistency is reached.
