Sweet Potato Home Fries (Vegan)

Sweet Potato Home Fries

Who doesn't love home fries with breakfast?!  These are a bit healthier than the typical version.  Only a little bit of coconut oil was used to make this breakfast side dish.  To season these I used salt, pepper and smoked paprika.  Feel free to experiment!  Chili powder would be good too!


2 Sweet Potatoes, Diced Large

2 tsp Coconut Oil

1/2 Onion, Julienned (sliced thin)

1 Clove Garlic, Chopped

Salt and Pepper

Smoked Paprika

Dice the sweet potatoes and give them a good rinse.  Let drain thoroughly.  Heat a good sized pan over medium heat with the coconut oil.  Add the sweet potatoes to the pan in a single layer.  Cook them like this for about 8 minutes without turning or tossing.

Once the potatoes are nicely browned, add the onion.  Cook while tossing for about 5 minutes then cover.

Keep covered for about 5 minutes.  Remove the lid and add the garlic, salt, pepper, and paprika.  Or whatever seasonings you wish to add.

Continue to cook until the sweet potatoes are soft all the way through and slightly crisped.  It will probably only take about five more minutes, depending on the size you cut the potatoes.  These are about a half inch dice.

Serve with breakfast!
