Oatmeal Energy Bars

Oatmeal Energy Bars-kind of like clifbars, but better


These Oatmeal Energy Bars are made with old fashioned rolled oats and your favorite trail mix.  Wrap these individually and freeze them to make a grab and go snack you can throw in your bag.  These are sweetened with applesauce and just a touch of maple syrup.  The trail mix I use is loaded with dried fruit and dark chocolate chips which both add some sweetness as well.  Still, it's not an overly sweet recipe so be sure to adjust to your liking.

Cranberry Harvest Trail Mix is loaded with dried cranberries and apples, dark chocolate chips, sunflower seeds, pumpkin seeds, valencia peanuts and almonds.


2 Cups Old Fashioned Rolled Oats

1/2 Cup Trail Mix, I use one I find in the bulk food bins called Cranberry Harvest

1 tsp Cinnamon 

1/4 tsp Kosher Salt

2 Eggs 

1/2 Cup Unsweetened Apple Sauce

1/2 Cup Unsweetened Almond Milk

1 Tbsp Pure Maple Syrup

1 tsp Vanilla Extract

Preheat the oven to 350F and grease the baking dish you'll be using.  I use a 6 X 10 inch Pyrex casserole dish.  In a large bowl combine all the dry ingredients.  In a small bowl, lightly beat the eggs and mix with the apple sauce, almond milk, maple syrup, and vanilla.  Pour the wet ingredients into the dry ingredients.  Mix thoroughly.  Put your mixture in the greased baking dish making sure the top is fairly level.

Place in the oven and bake for 35 minutes.  Remove from the oven and allow to cool at room temperature.  Turn over onto a large cutting board and cut into single portions.  I get 10 bars out of this recipe.  You could cut these into bite sized nuggets instead of bars.  These make a really great snack or a nice treat thats actually good for you.  Take one with you for a quick breakfast to go or eat between meals to keep your energy levels high.
